SHRIMP CURRY 
1 lb. large shrimp, steamed, shelled and deveined
1/2 stick butter
1/2 granny smith apple, cut into small pieces
1/2 large yellow onion, chopped
3 tbsp. flour
2 tbsp. curry powder
1 c. chicken broth
1 c. heavy cream
Juice of one lime

Saute onions and apple until the onion is transparent. Mix in the curry and flour, add chicken broth and shrimp, stir well, then add cream and lime juice. Simmer until the shrimp are cooked. A few drops of red food coloring can be added to improve color, if necessary. Side accompaniments: chutney, sliced almonds, bacon bits, shredded coconut.
