SALMON LOAF 
1 lb. salmon
1 tbsp. lemon juice
2 eggs, beaten
2/3 c. chopped celery
1 1/2 c. course dry bread crumbs
1/2 tsp. baking powder
1/2 c. evaporated milk
1/2 c. liquid (fish juice and water)

Drain salmon, remove skin and bones, discard skin. Flake fish crush bones and add to salmon. Add remaining ingredients, then mix very well. Pack firmly into a greased loaf pan. Bake in moderate oven (350 degree oven) until brown and firm about 30 to 40 minutes. Serve with tomato sauce. Loaf pan 9 x 4 1/2 x 2 1/2 inch.
