PINEAPPLE DESSERT 
1 (8 3/4 oz.) can crushed pineapple
2/3 c. rice, uncooked
2 tsp. lemon juice
1 1/2 c. miniature marshmallows
1 ripe banana, sliced
1 c. whipping cream
2 tbsp. maraschino cherries

Drain pineapple and reserve syrup. In a saucepan, combine uncooked rice, 2/3 cup pineapple syrup and 1/2 teaspoon salt. Stir to moisten rice. Bring quickly to a boil, cover and simmer 5 minutes. Remove from heat and let stand 5 minutes. Add pineapple and lemon juice. Cool. Stir in marshmallows and bananas. Fold in the cream and cherries. Serves 8.
