“PEACH TORTE” IS IN:

PEACH TORTE 
Pastry:

2 cups sifted flour
3/4 cup butter
2 egg yolks
2 tablespoons sugar
1/4 teaspoon baking powder

Sift together the flour, sugar and baking powder. Blend in the butter. Add egg yolks. Pat dough into a 11-inch spring form.

Filling:

6 egg yolks
2 cups sugar
grated rind of 1 lemon
1 quart sliced peaches
1 1/2 cups ground almonds
6 egg whites, beaten stiff

Beat egg yolks. Gradually beat in 1 cup sugar and the lemon rind. Add peaches and almonds. Beat egg whites stiff. Gradually beat in remaining cup sugar. Fold in yolk mixture. Pour into lined form. Bake in a preheated oven for 1 hour at 350°F. Cool. Serve with whipped cream and sliced pistachio nuts.
