GLAZED CHICKEN BREASTS 
1 slice white bread, diced
1 tbsp. scallions, minced
1/2 c. fresh mushrooms, chopped
2 tbsp. butter
1 lg. boneless chicken breast, cut in half
3 tbsp. honey
4 tsp. lemon juice

Preheat oven to 350 degrees. In small frying pan, saute bread cubes, scallions, mushrooms in butter until cubes are lightly browned. Flatten chicken breast and, with sharp knife, make a small pocket in each half; fill with stuffing and place in buttered baking dish.

Bake 15 minutes; brush with mixture of honey and lemon juice, and bake 30 minutes or longer, basting often with honey mixture. Serve with wild rice.
