APPLE, CARROT AND RAISIN SALAD 
1/2 c. raisins
2 carrots, peeled
2 apples, unpeeled
1/2 c. sour cream

Pour boiling water over raisins and let stand 10 to 15 minutes. Grate carrots on coarse section of grater. Wash and dry apples. Remove cores and cut into 1/2 inch cubes.

Drain raisins thoroughly and mix with carrots, apples and sour cream. Serve on lettuce leaves. Serves 6.
