MEATLESS/VEGETABLE CURRY 
2 c. kidney beans, drained
2 c. cooked brown rice
1 c. sliced carrots
1 c. sliced onions
1 c. sliced zucchini (or other summer squash)
2 tbsp. butter
2 1/2 tbsp. flour
2 c. milk
3/4 c. instant milk
2 tsp. curry powder
1 tsp. honey (optional)

CONDIMENTS:

Raisins
Coconut
Sunflower seeds
Chopped peanuts
Green grapes
Shrimp
Chutney

Saute vegetables until just tender.

Make white sauce by melting butter. Add flour and cook a few minutes. Slowly add milk, stirring with a whisk. Add instant milk, curry powder (to taste) and optional honey.

Mix rice and beans and top with vegetables and then sauce. Add condiments as desired.
