SOUR CREAM ENCHILADAS 
1 lb. lean ground beef
1 med. onion, chopped
1 sm. can Ortega chilies
1 pt. sour cream
1 can cream of Mushroom soup
1 pkg. flour tortillas
8 oz. cheddar cheese

Brown meat and onion. Add chilies and 1/2 cup sour cream. Place a spoonful or two of meat mixture on tortilla and roll. Place in greased 9 x 13 inch baking dish. Spread with remainder of sour cream and mushroom soup mixed together. Top with shredded cheese. Bake at 350 degrees for 30 to 45 minutes until hot and bubbly.
