RATATOUILLE 
Zucchini
Yellow squash
Peppers
Onions
Eggplant
Tomatoes

Put olive oil in skillet. Add all the vegetables with have been washed and sliced or cubes. Cook, uncovered, on medium/high heat. When partially cooked, add Italian seasoning, garlic, basil, parsley, salt, and pepper to taste. Add tomato sauce if needed. Continue cooking until vegetables are tender but not mushy.
