CHRISTMAS CASSEROLE 
2 lbs. Jimmy Dean sausage, cooked, scrambled
8 slices bread (white or sourdough)
2 c. grated Cheddar cheese
6 eggs
2 1/2 c. milk
3/4 tsp. prepared mustard
1 can cream of mushroom soup
Fresh mushrooms, sliced

Spray 9x13 inch pan with Pam. Place layer of bread in bottom of pan. Cover with layer of sausage, sprinkle 1/2 of cheese. Cover with layer of bread, remainder of sausage and cheese.

Beat together eggs, milk and prepared mustard. Pour over mixture. Cover with plastic wrap. Refrigerate overnight.

In a.m., cover with mushrooms, if desired and soup. Bake 1 hour at 350 degrees or until set. Cool 5 minutes. Cut in squares and serve.

This is my Aunt Minnie Ella's Christmas morning breakfast dish. Serve with fruit. It should serve 8 but may do only 6. There is never any left.
