FATTIGMAN (DOUGHNUTS) 
Beat:

11 egg yolks, well beaten

Add:

5 tablespoons cream
8 tablespoons sugar
1/4 teaspoon salt
1/4 teaspoon nutmeg, mace or cloves

Add flour enough to make a stiff dough. Chill slightly and roll out on floured board quite thin. Cut in triangles and brown in hot oil (365°F).

Drain on paper towels.

Shake in bag of powdered sugar if desired.

Note: This same recipe can be used to make plain doughnuts if cut into a round shape. A smaller cookie cutter can be used to cut out the doughnut holes.
