LIGHT POTATO SALAD | |
1 lb. 2 oz. cooked potatoes, peeled, cubed, and chilled 1 c. celery, chopped finely 1/2 c. red onion, chopped finely 1/2 c. plain low-fat yogurt 1/4 c. cholesterol free mayonnaise 1 tbsp. chopped or dry dill seed 1 tbsp. chopped or dry parsley Dash of salt OR Mrs. Dash to taste Dash of white pepper 2 tsp. white vinegar 1 tsp. sugar OR Equal In bowl, combine potatoes, celery, and onion and set aside. In small bowl, combine yogurt and remaining ingredients. Add to potato mixture, stir to coat. Cover, chill at least 30 minutes to blend flavors. Makes 4 servings. |
