FRESH APPLE CAKE 
CAKE:

4 c. diced apples
2 c. flour
2 c. sugar
1/2 c. oil
2 tsp. cinnamon
2 well beaten eggs
1 c. walnuts, chopped
1 tsp. salt
2 tsp. vanilla

ICING:

1 (8 oz.) pkg. soft cream cheese
2 c. sifted powdered sugar
1 tbsp. soft butter
1 tsp. vanilla

Bake in 13x9 inch pan.

Cake:

Bowl 1: Peel apples, add sugar, oil and eggs.

Bowl 2: Mix flour, cinnamon, walnuts, salt. Mix both bowls together and add vanilla. Bake in 13x9 inch pan (greased) for 1 hour at 350-375 degrees.

Icing:

Combine 1 (8 ounce) package soft cream cheese and 2 cups sifted powdered sugar. Add 1 tablespoon of butter (soft), 1 teaspoon vanilla. Mix well. Ice cake when cool.
