ZUCCHINI DROP COOKIES 
1 c. zucchini pulp
1 tsp. baking soda
1 c. sugar
1/2 c. shortening (part butter)
1 egg, beaten
2 c. flour
1 c. nuts, chopped
1 c. raisins
1/2 tsp. nutmeg
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves

Beat thoroughly zucchini pulp, soda, sugar and shortening until creamy. To prepare the zucchini pulp, grind raw zucchini. Add egg, beat well. Sift flour and spices. Add dry ingredients with nuts and raisins. Drop by spoonfuls on greased baking sheet. Bake at 375 degrees for 12 to 15 minutes. Makes 3 dozen.
