SCALLOPED SWEET POTATOES | |
1/2 c. apple jelly 1/4 c. butter 1 tsp. salt 3 lg. sweet potatoes (cooked, peeled and sliced) 2 Granny Smith apples (peeled and sliced) In saucepan, combine butter, jelly and salt. Heat until melted and well blended. Arrange half of potatoes on bottom of a greased 8 inch square baking dish. Spoon some jelly mixture over potatoes. Arrange half over top with some jelly mixture. Repeat layers and pour remaining jelly over top. Cover with foil and bake at 350 degrees 40 minutes. Uncover and bake 10 more minutes to brown top slightly. 6 servings. |
