BROCCOLI CHOWDER | |
2 tbsp. butter 4 stalks broccoli 1/2 cup chopped carrots 1/4 cup chopped onions 1 partially cooked potato, chopped 1/2-1 cup chopped ham or bacon 1 can cream of broccoli soup 1 can cream of cheese broccoli soup 1 can cream of chicken soup 1 can low-fat evaporated milk 1/2-1 cup low-fat fresh milk 1/2 tsp. thyme 1/2 tsp. pepper Melt butter in a large pot. Sauté vegetables several minutes until starting to soften. Stir in meat. Add cream soups and milks to desired consistency. Add spices and simmer 15 minutes or until fresh broccoli is cooked but not mushy. Can add mushrooms or other vegetables or substitute cream soups as desired. May need extra milk if reheated.
