SANTA FE CHICKEN 
4 half chicken breasts, boned, skinned & cubed
6 slices bacon
1 green pepper
1 red pepper
1 med. onion, chopped
1/2 tsp. chili powder
1/2 tsp. garlic powder
3-4 tbsp. chopped parsley

1. In large skillet, cook bacon over medium high heat until crisp. Drain on paper towel.

2. Discard all but 1 tablespoon bacon fat.

3. Rinse and seed peppers. Cut into strips.

4. In skillet with bacon fat. Add onions and peppers. Saute over medium heat for about 5 minutes.

5. Add chicken and spices.

6. Cook, stirring, for about 15 minutes or until chicken is cooked through.

7. Crumble bacon and sprinkle on top. Sprinkle with chopped parsley and serve immediately.
