BARLEY AND KIDNEY BEANS 
1 c. cooked and cooled barley
1 (15 oz.) can kidney beans, rinsed and drained
12 quartered cherry tomatoes
1/2 c. chopped parsley
1/4 c. sliced scallions
1/2 c. lowfat Italian dressing

Mix all ingredients together and refrigerate for several hours. 4 servings.
