SHRIMP AND AVOCADO SALAD 
10 oz. frozen peas, thawed
1/2 tsp. salt
1 1/2 c. tomato juice
1 1/3 c. minute rice
1/2 c. chopped dill pickle
1/8 tsp. pepper
1 tsp. grated onion
1 or 2 c. cooked shrimp, cut in half
1/2 c. mayonnaise and 1/4 c. French dressing, mixed together
Salad greens
Tomato wedges
1 avocado

Combine tomato juice and salt in saucepan. Bring to boil. Add rice and stir just to moisten all rice. Cover and remove from heat. Let stand 5 minutes, then add thawed peas, pickle, onion, and pepper. Mix lightly and chill. Just before serving, add shrimp, avocado (cut in pieces), and chilled dressing. Toss lightly. Serve on greens and garnish with tomato wedges.
