SQUASH PANCAKES 
1 lb. yellow squash, about 2 lg. ones
1 lg. beaten egg
1/2 c. flour
2 tbsp. grated onion
2 tbsp. cooking oil
1 tsp. salt
1 tsp. baking powder

Grate squash and onion. Combine all ingredients and mix well. Drop by spoonfuls on hot griddle and cook until golden on both sides. Makes about 12.
