FRENCH ONION QUICHE 
2 lg. Spanish onions
5 tbsp. butter
1 tbsp. flour
3 eggs, slightly beaten
1 c. light cream or half & half
1/2 tsp. salt
Dash pepper & nutmeg
9" pastry shell
1/2 c. grated Parmesan cheese

Chop onions. Saute in butter until golden; cool. Stir in flour, eggs and cream; mixing well. Season with salt, pepper and nutmeg. Pour into shell. Sprinkle with cheese. Bake at 350 degrees for 30-35 minutes or until set.
