CHOLESTEROL - FREE POPOVERS 
6 egg whites
1 c. skim milk
2 tbsp. butter, melted
1 c. all-purpose flour
1/4 tsp. salt (optional)

About 1 1/2 hours before serving: Grease twelve 2 1/2 inch muffin pan cups. Preheat oven to 375 degrees. In large bowl, beat egg whites medium speed until frothy, beat in milk and butter until blended, beat in flour (and salt optional) until smooth. Fill each cup 3/4 full. Bake 30 - 45 minutes remove from oven, slit top bake 5 minutes longer, remove from cup, serve piping hot when they are at their very best!

Each popover about 70 calories, 2 g. fat, negligible cholesterol, 60 mg. sodium.
