SUMMER SALAD 
12 oz. can shoe peg corn, drained
1/2 c. green pepper
1/2 c. onion
1 c. cucumber, thinly sliced
1/2 c. celery
2 oz. jar chopped pimento, drained
1/2 c. red wine vinegar
1/2 c. oil
3 tbsp. sugar
1 tsp. salt

Mix together all ingredients. Chill overnight in refrigerator.
