LINGUINE AND PLUM TOMATOES 
1 (9 oz.) pkg. fresh linguine or 12 oz. dried pasta, cooked according to package directions and drained
1 tbsp. olive oil
1 clove garlic, crushed
2 med. plum tomatoes, seeded and chopped (about 1 c.)
1/3 c. fat-free Italian-style salad dressing
2 tbsp. freshly grated Parmesan OR Romano cheese
1 tbsp. chopped fresh parsley

In a large skillet, heat oil and add garlic. Saute until fragrant, about 1 minute. Add tomatoes and cook, stirring frequently, until soft and slightly sticky.

Pour tomato mixture and salad dressing over hot pasta and sprinkle with Parmesan and parsley. Toss. Divide pasta into 4 servings. Serve as a side dish with Pork Florentine. Makes 4 servings.
