LINGUINE WITH CLAM SAUCE 
4 (6 1/2 oz.) cans minced clams
2 tbsp. olive oil
2 tbsp. butter
2 garlic cloves, finely chopped
2 tbsp. flour
1/4 c. chopped parsley
1/4 tsp. salt
1/4 tsp. freshly ground pepper
1/4 tsp. grated lemon peel
1 lb. linguine or other pasta, cooked
Grated Parmesan cheese, optional

Drain broth from clams; set aside. In saucepan heat oil and butter; add garlic and saute 1 minute. Sprinkle in flour and cook, stirring constantly 1 minute. Add clam broth, parsley, salt, pepper and lemon peel; simmer 10 minutes. Add clams and heat. Toss with cooked pasta. Serve with cheese if desired. Makes 4 servings.
