PECAN PIMENTO SALAD 
1 pkg. lemon gelatin
1/4 tsp. salt
1/2 tsp. grated lemon rind
2 tbsp. lemon juice
1/4 c. chopped pimento
1/2 c. chopped pecans
1/2 c. celery, finely chopped

Prepare gelatin according to package directions. Add salt, lemon rind and juice. Cool until mixture begins to thicken. Add pimento, pecans and celery. Pour into mold. Chill until firm. Serve on lettuce leaf.
