DOUBLE-DIPPED CRISPY FRIED CHICKEN | |
Chicken Flour Salt Pe pper Sage Seasonings, to taste Ice water Milk OR buttermilk Butter Vegetable oil Cut chicken into serving-sized pieces. Season sufficient amount of flour with salt, pepper, sage and any other seasonings you like. Place in a plastic bag for shaking. Dip chicken pieces 1 at a time in milk or buttermilk. Drop 1 or 2 pieces of chicken into seasoned flour and coat thoroughly. Dip coated chicken pieces into ice water, then drop back into the seasoned flour. Coat chicken pieces once more with the seasoned flour. Place chicken pieces on a platter and let stand 30 minutes before frying. Fry chicken in mixture of melted butter and vegetable oil until done, approximately 30-40 minutes, turning only once. Drain chicken on paper towels and serve. |
