BEEF TENDERLOIN | |
1 fillet of beef (about 5 lbs.), fat removed 3 tbsp. butter 1 lb. mushrooms, sliced 1 c. sherry Have butcher tie a piece of suet on top. Heat oven to 400 degrees. Place meat in large shallow baking pan. Place in oven and roast for 30 minutes. Meanwhile, heat butter in skillet over moderately low heat, add mushrooms, cook until tender. Reduce oven temperature to 375 degrees. Remove suet from top of roast. Spoon mushrooms around meat, pour sherry over it. Salt and pepper if desired. Roast 20 minutes longer or until thermometer shows 140 degrees rare or 160 degrees for medium rare. Baste frequently. Serves 8. |
