ORANGE-DATE-NUT BREAD 
6 oz. dates, chopped
1/2 c. boiling water
1 tsp. butter
1 egg
1/4 c. sugar
1/2 c. orange juice concentrate, thawed
1 1/2 c. flour
1/4 tsp. salt
1 tsp. baking soda
2 1/2 oz. walnuts, chopped

STEP 1: Pour boiling water over the chopped dates. Stir until lukewarm.

STEP 2: Beat in by hand butter, egg, sugar and orange juice concentrate. Sift together dry ingredients, except nuts.

STEP 3: Fold dry ingredients into date mixture. Add chopped nuts and blend through.

STEP 4: Pour into a 9 by 5 inch loaf pan that has been sprayed with a non-stick spray and bake in a preheated 350 degree oven for 45 to 55 minutes, or until toothpick inserted in loaf comes out clean.

STEP 5: Cool in pan for 5 minutes. Turn out onto rack and let cool completely.
