BANANA MUFFINS OR BREAD 
1 3/4 c. sifted flour
3/4 tsp. baking soda
1 1/4 tsp. cream of tartar
1/2 c. shortening, softened
1/2 tsp. salt
2/3 c. sugar
2 well beaten eggs
1 c. mashed ripe bananas
1/2 c. chopped nuts

Sift dry ingredients 3 times; set aside. Cream shortening and sugar; beat in eggs and beat together for 1 minutes. Add dry ingredients and bananas alternately to the creamed mixture. Beat all together until smooth. Add nuts and pour into muffin tins or loaf pan. Bake 1 hour at 350 degrees.
