PEACH BREAD 
3 c. sliced peaches
6 tbsp. sugar
2 eggs
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 1/2 tsp. cinnamon
2 c. flour
1 1/2 c. sugar
1/2 shorting or vegetable oil
1 c. chopped pecans
1 1/2 tsp. vanilla

Use fresh peaches if possible, if not; drain off juices and mash peaches. Put 6 tbsp. sugar on peaches. Combine flour, baking powder, soda, salt, and cinnamon; set aside. Combine 1 1/2 c. sugar and shortening; cream well. Add eggs; mix well. Add peaches to dry ingredients; mix well. Stir in nuts and vanilla. Pour into greased and floured loaf pans. Makes 3 loaves. Bake at 325 degrees for 50 to 55 minutes or until done.
