POTATO MUFFINS 
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1 tsp. allspice
1/4 c. butter or shortening
3 tbsp. sugar
1 c. mashed potatoes
1 c. milk

Mix and sift the dry ingredients as for any muffins. Cream the butter or shortening with sugar. Add well-beaten egg and potatoes. Blend thoroughly and add alternately the flour mixture and the milk. Pour in well-greased muffin pans and bake for 20 to 30 minutes in hot oven, about 400 degrees.
