BEAN SLAW 
1 sm. apples (about 1/4 lb.), cored and diced
2 tsp. lemon juice
2 c. shredded green cabbage
6 oz. rinsed, drained canned sm. white beans
1/2 c. shredded carrots
1 oz. Swiss cheese, shredded
1/4 c. each sliced scallions (green onions), diced red bell pepper, diced green bell pepper, and plain low-fat yogurt
1 tbsp. plus 1 tsp. reduced calorie mayonnaise
Dash each of salt and pepper

In medium mixing bowl, combine apple and lemon juice and turn to coat. Add remaining ingredients and toss to combine. Cover with plastic wrap and refrigerate until flavors blend, about 1 hour. Toss again before servings. Makes 2 servings.
