OVEN POPOVER WITH SAUSAGE AND
APPLES
 
2 eggs
1/4 tsp. salt
1/2 c. each milk & flour
1 tbsp. butter
8 pork sausages, cooked
3 apples, cored, sliced & sauteed in butter until tender

Preheat oven to 400 degrees. Beat eggs, salt, milk and flour until smooth. Melt butter in a heavy cast iron skillet in oven and swirl to coat pan. Immediately add the batter. Slide back into oven and bake for 20 minutes or until the pancake is puffed and golden brown. Fill center with sausages and apple rings that were prepared while popover was baking. Cut into 8 wedges. Serves 4.
