SPICED APPLE PORK ROAST | |
1 rolled boneless pork loin roast (4 to 5 lb.) 1 garlic clove, cut into lengthwise strips 2 tbsp. flour 1 tsp. salt 1/2 tsp. sugar 1 tsp. prepared mustard 1/8 tsp. pepper 1 c. applesauce 1/3 c. packed brown sugar 2 tsp. apple cider vinegar 1/8 to 1/4 tsp. ground cloves Remove and discard excess fat from roast. Slice slits in top of roast; insert garlic strips. Mix the flour with the salt, sugar, mustard and pepper. Rub over roast. Place the meat, fat side up, on a rack in roasting pan. Bake at 325°F for 30 to 40 minutes per pound. Internal temperature must reach 160°F to 170°F. On stove, combine applesauce, brown sugar, vinegar and cloves. Generously brush over roast during last half hour of baking. Makes 12 to 15 servings. Doubling the applesauce mixture will leave more to serve with roast. |
