SHRIMP KABOBS | |
1/3 c. salad oil 1/3 c. lemon juice 3 or 4 cloves garlic, minced (2 tsp. garlic powder) 1/2 tsp. salt 1/2 tsp. paprika 1/4 tsp. pepper 2 green peppers, cut in wedges 2 onions, cut in wedges 12 cherry tomatoes Combine marinade ingredients, pour over shrimp and refrigerate at least two hours. Drain, reserving marinade. On greased 12 inch skewers, alternate shrimp, green pepper and onion. Brush with marinade. Broil over coals about 20 minutes, turning and brushing with marinade often. Place tomatoes on skewers last 2-3 minutes of cooking. To skewer the shrimp in pairs, just turn the second shrimp upside down and reverse its direction to the first. |
