1 lb. ground beef
1 lg. can Luck's pinto beans
1 med. onion, chopped
6 med. potatoes
1 box Jiffy cornbread mix

Peel potatoes and boil in water over medium heat until tender. Brown hamburger and drain grease. Pour water from potatoes, leaving thickening. Mix in large casserole dish potatoes, pinto beans, onion and hamburger. Mix Jiffy cornbread mix according to directions and pour on top. Bake at 350 degrees for 45 to 50 minutes or until cornbread is browned.
