SOFT PRETZELS 
1 tbsp. hot water
1 tsp. dry yeast
1/2 c. plus 2 1/2 tbsp. warm water
2 1/2 tbsp. brown sugar
2 1/2 c. flour
coarse Kosher salt
Baking soda

Preheat over to 475 degrees. In large bowl, mix hot water and yeast until yeast dissolves. Stir in warm water and brown sugar. Slowly add the 2 1/2 cups flour to the mixture, stirring constantly. Put dough on lightly floured board and knead dough until stretchy and smooth. Grease a cookie sheet very well. Sprinkle 15 areas with Kosher salt. Set sheet aside. Roll out dough into about 14-inch long rope. Shape. Place 2 cups water and 1 tablespoon baking soda and gently boil. Place each pretzel into frying pan for 45 seconds. Lift out and place on salted cookie sheet. Sprinkle Kosher salt on top each pretzel. Bake 8-10 minutes or until golden brown. Makes 15 pretzels.
