FRUIT CAKE IN MINUTES | |
1/2 c. diced candied green cherries 1/2 c. diced candied red cherries 1/2 c. chopped citron 1/2 c. golden raisins 1/2 c. chopped dates 1/4 c. currants 1/3 c. brandy 1/2 c. packed dark brown sugar 1/2 c. butter 1 tsp. vanilla 3 eggs 2 tbsp. molasses 3/4 c. all purpose flour 1/2 tsp. salt 1/2 tsp. baking powder 1/2 tsp. ground nutmeg 1/2 tsp. ground allspice 1 c. coarsely chopped walnuts Lightly grease 8 x 10 inch cup baking ring. Mix green and red cherries, citron, raisins, dates, currents and brandy. Set aside. Beat brown sugar, butter and vanilla until fluffy; add eggs and molasses. Beat in remaining ingredients except nuts until well blended. Stir in fruit and brandy mixture and nuts. Pour into baking ring. Microwave at medium-high (70%) until wooden pick inserted in center comes out clean, approximately 10 to 16 minutes. If using oven other than Sharp Carousel, rotate 2 or 3 times. When done, cool. Wrap in cheesecloth which has been soaked in wine, brandy or rum. Store tightly covered. For longer storage use more wine, brandy or rum. |
