RED HOT TUNA MELTS 
For 4 sandwiches you will need:

1 can (6 oz.) tuna, oil or water packed
1 tbsp. oil
1 med. tomato, seeded, chopped
4 green onions, whites & some green sliced
1 tsp. capers, optional
2 anchovies, minced, optional
1 heaping c. Jack or cheddar cheese
4 French or sour dough rolls
Crushed red pepper

Drain liquid from tuna. Place oil, tomato and green onions in microsafe dish. Cover with wax paper.

Microwave at HIGH powder for 2 minutes.

Add capers and anchovies, if used. Add tuna, breaking it up. Stir in half of cheese. Cover with wax paper.

Microwave at HIGH power for 1 minute.

Slice rolls in half. Spoon tuna mixture on bottom half of rolls.

Sprinkle with cheese and crushed red pepper. Place on microsafe dish.

Microwave at MEDIUM HIGH power for 2 1/2 to 3 minutes until cheese is bubbly.

Place tops on sandwiches. Microwave at MEDIUM HIGH power for 30 seconds.

Place on serving dish. Let sit a minute or two before serving.

TIPS: When microwaving sandwiches, firmly textured bread heat butter. French and sourdough rolls heat well. Toasted bread will not remain crisp. The filling can be heated separately. Fillings should be evenly spread over bread and close to edges. Fillings get very hot, so allow a brief standing time for heat to be distributed.

Since microwave ovens vary in power, you may need to adjust your cooking time.
