COUSCOUS SALAD | |
DRESSING: 2 lemons, juice only 2 tsp. Dijon mustard 1/2 tsp. salt 1/4 tsp. black pepper 3/4 c. olive oil Combine first 4 ingredients and mix well. Slowly add the olive oil and blend well. SALAD: 1 (1 lb.) box couscous, cooked according to pkg. directions & cooled slightly 6 green onions 4 tomatoes, peeled, seeded & cut in chunks 1 green bell pepper, seeds & membranes removed, diced 1/2 c. parsley, chopped 1/3 c. dill, chopped Combine salad ingredients and toss with the dressing. Let marinade in refrigerator for at least 1 hour or overnight. |
