CARROT - RAISIN SALAD 
2 c. shredded raw carrots
1/2 c. seedless raisins
1/4 c. mayonnaise
1/4 c. low-fat yogurt or 2 tbsp. milk
2 tbsp. fresh lemon juice
1 tbsp. honey
1/8 tsp. salt

Scrape carrots and shred to make 2 cups. Combine with raisins. Mix together mayonnaise, yogurt, lemon juice, salt and honey. Pour over salad and mix thoroughly. Yields: 5 to 6 servings.
