FRIED RICE 
2 eggs, slightly beaten
1 c. bean sprouts or 1/2 c. frozen peas, thawed
1/2 c. diced mushrooms
1 tsp. salt
3 c. cooked rice
2 tbsp. dark soy sauce
1 c. chicken or shrimp, diced
2 green onions, chopped
5 tbsp. oil for stir frying

Prepare vegetables. If using canned beans rinse and drain. May cook in wok or large frying pan. Add 1 tablespoon oil and heat. Add egg, stir until soft scrambled. Remove to a plate, set aside.

Add 2 tablespoons oil and cook beans, salt, mushrooms 1 minute. Remove set with eggs. Add remaining oil add rice, stir until hot. Add soy sauce, stir into rice them add onions and meat, return remaining ingredients to wok or frying pan. Cook all of it together for about 2 minutes. Serves 4 to 6.
