1 pkg. frozen chopped spinach, thawed English muffins Slices of cooked ham steaks 1 stick butter 1 pt. heavy cream 2 eggs 1 1/2 tbsp. lemon & pepper seasoning 1/2 tsp. dry mustard 1. First, look elsewhere in this cookbook for the recipe for how to prepare poached eggs, then do it and place them to one side. 2. In a bowl place the spinach and cook until it is warm and falls apart easily and completely. 3. Place the muffins in a toaster and toast them, so far so good! 4. Place the toasted muffins on a plate and put the ham steak on top; and on that place one good spoonful of the spinach and on top of the place one of the drained poached eggs from earlier. 5. Melt the butter in separate bowl for one minute on high. 6. Add the heavy cream, 2 egg yolks, the lemon and pepper and the mustard. Mix this completely. 7. Pour this sauce over the muffin/ham/eggs stacks from earlier. 8. Nuke the stacks that are covered with the sauce on 50% power for about 2 minutes. 9. Serve this NOW! The Scorpion's Mascots |
