BITTERSWEET HOT FUDGE SAUCE 
8 oz. bittersweet chocolate, coarsely chopped
1/2 c. unsalted butter, cut into sm. pieces
1/4 c. whipping cream

This sauce may be made up to a week ahead and kept in the refrigerator and then reheated in double boiler or microwave. Don't worry about amount. It will be gone before the week is over. Delicious on vanilla or strawberry ice cream.

In top of double boiler over medium heat, combine the chocolate and butter and melt slowly. When melted, whisk in the cream. Pour over ice cream and serve immediately.

This may be prepared 4 hours in advance and kept barely warm in a double boiler or kept at room temperature and heated just before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
