NO CRUST PUMPKIN PIE 
4 eggs
3/4 c. sugar
1 tsp. ginger
1 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. salt
1 3/4 c. pumpkin or squash
1 c. milk

Mix well, beaten eggs, sugar, spices, salt and pumpkin. Add milk and stir until mixture is smooth. Pour into a greased 9-inch pie pan. Bake in a slow 325 degree oven about 50 minutes until firm. Cool on wire rack, then chill. Serve plain or with topping.
