SPICE POUND CAKE 
4 eggs
1 c. butter
2 c. all-purpose flour
2 tsp. apple pie spice
1 tsp. baking powder
1 c. packed brown sugar
1 tsp. maple flavoring
1 recipe Lemon Glaze, optional

Bring eggs and butter to room temperature. Grease and flour a 9 x 5 x 3 inch loaf pan. In a small mixing bowl, stir together flour, spice and baking powder. Set aside.

In large mixing bowl, beat butter with an electric mixer on medium speed about 30 seconds or until softened. Gradually add sugar, beating 6 minutes or until fluffy. Add maple flavoring. Add eggs, one at a time, beating 1 minute after each addition, and scraping bowl frequently. Gradually add flour mixture, beating on low speed, just until combined.

Turn into prepared pan. Bake in a 325 degree oven 60-65 minutes or until toothpick inserted in center comes out clean. Cool for 15 minutes on a wire rack. Remove from pan, cool. Drizzle with Lemon Glaze. Serves 12.

LEMON GLAZE:

3/4 c. sifted powdered sugar
3 tsp. lemon juice

Combine in a small bowl.
