LESS IS BETTER POTATO SOUP 
This is my great-grandmothers recipe for potato soup. There are no measurements to the amounts involved because she often would "eyeball" the amounts. She cooked in a time where the amount involved was the amount needed to suit the large families needs. You can make this a small or large batch.

The title comes from the fact that its all made in one pot. There is less moving around of the items and no additional dishes need. It is extremely delicious and my children absolutely love it! I hope it is enjoyed by all that wish to try something old with a new twist.

The optional ingredients are items I have added to give it a more recent flavor but are not necessary for a delicious, warm, meal. I cook it in both styles depending on what I have in the kitchen. Any additions will probably taste amazing as well. Have fun with it!!

baking potatoes
chicken broth (optional)
onions
garlic (optional)
butter
cornstarch
milk
bacon (cooked and crumbled)
cheddar cheese

1. Peel and dice potatoes.

2. Place potatoes into pot and add water or chicken broth just till potatoes are covered. Bring to a boil.

3. Dice onions. Peel and chop garlic to desired pieces. A few cloves should be fine depending on what you like.

4. When potatoes are fork tender, use a potato masher (or other device, a whisk can be a good substitute) to mash the potatoes a little. Be sure to leave some chunks if you like or mash till there are none whatever your preference is (we personally like chunks).

5. Add onions and garlic to mixture and stir.

6. Add a small amount of butter.

7. Add a little cornstarch (you wont need a lot) and milk in small amounts allowing to continue to boil, stirring occasionally till desired consistency.

8. Add crumbled bacon and shredded cheddar cheese. Serve hot.
