GINGER CASHEW CHICKEN | |
3/4 lb. boneless chicken breast, 1-inch cubes 2 onions, chopped 2 stalks celery, chopped 3 cloves garlic, minced 1 c. sliced mushrooms 1 c. bean sprouts 1 c. trimmed snow peas 1/4 c. unsalted dry roast cashews 1 tbsp. minced fresh ginger 1 tbsp. reduced-salt soy sauce 3 c. cooked brown rice Spray wok. Stir-fry chicken. Stir-fry onions, celery and garlic. Add mushrooms, sprouts, snow peas, cashews, ginger, soy and chicken. Heat until veggies are tender and chicken is done. |
