CHEDDAR CORNMEAL MUFFINS 
1 c. all purpose flour
1/2 c. cornmeal
1 heaping tsp. baking powder
1/2 tsp. salt
Pinch cayenne
1 c. milk
1/4 c. melted butter
1 1/2 c. grated sharp cheddar cheese

Stir together flour, cornmeal, baking powder, salt and cayenne. Beat egg with milk and butter and add to dry ingredients, stirring to moisten. Stir in one cup cheese and spoon into greased muffin cups. Sprinkle with remaining cheese. Bake at 375 degrees for 15 to 20 minutes.
